Chicken Grain Bowl with Habanero Sauce

Ingredients

1 lb of a dry grain, cooked and set aside (rice, pasta, quinoa, etc)

1 ½ lbs chicken breast, grilled or heavily seared

½ onion, cut into chunks and grilled or heavily seared

1-2 mild peppers, cut into chunks and grilled or heavily seared

Handful of cherry tomatoes, cut in half

Feta cheese

75 g olive oil

20 g lime juice

One bunch of cilantro, rough chopped

¼ onion or shallot, rough chopped

1 bell pepper, rough chopped

1 habanero pepper, rough chopped

Directions

Using a blender, food processor, or even by hand chopping everything very fine, combine the olive oil, lime juice, cilantro, onion, bell pepper, and habanero pepper to form a sauce. Season the sauce with salt and pepper to taste, also adding any more lime juice if needed.

Combine all of the ingredients in a large bowl, except for the sauce. Add around half of the sauce and continue adding to taste until it’s to your liking, then refrigerate the leftover sauce. Serve hot or cold.

Notes

A filling grain bowl with grilled chicken breast and a chimichurri inspired habanero sauce as a base. This dish is best made using a grill, but a cast iron skillet or other similar pan can be used to produce similar results. This recipe is more of a template for this kind of dish, so feel free to swap out ingredients for something similar on hand.
