Salmon Traybake With Broccoli & Sesame-Ginger Glaze

Ingredients

4 salmon fillets (150-200g each)

500g broccoli florets

2 tbsp sesame oil

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp honey

1-2 tbsp grated garlic

1 garlic clove, minced

1 tbsp olive oil

Sesame seeds, spring onion, lime for garnish

Directions

  1. Preheat oven 220°c

  2. In bowl, mix sesame oil, soy sauce, rice vinegar, honey, ginger, garlic > glaze

  3. Arrange broccoli and salmon (skin side down) on a lined tray. Drizzle olive oil & season

  4. Brush glaze over salmon, and lightly on broccoli

  5. Roast 12-15 mins (depending on thickness) until salmon cooked and broccoli tender

  6. Garnish with sesame seeds, spring onions & lime slices

Notes

Prep tip: roast extra broccoli for lunch bowls. Reheats well
