600 g boneless skinless chicken breast, cubed
1 tbsp olive oil
1 cup long-grain white rice, rinsed
2 cups chicken broth
1 cup pineapple chunks
1/2 cup pineapple juice
1/2 cup diced bell pepper
1/2 cup diced onion
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp honey or brown sugar
1 tsp paprika
Salt and black pepper to taste
Chopped green onions for garnish
Directions
- Heat olive oil in a large skillet or pot over medium-high heat
- Add chicken, season with salt, pepper, and paprika, and cook until lightly browned
- Stir in onion, bell pepper, and garlic; cook until fragrant
- Add rice and stir to coat with flavors
- Pour in chicken broth, pineapple juice, soy sauce, and honey
- Bring to a gentle boil, then stir in pineapple chunks
- Reduce heat, cover, and simmer 18–20 minutes until rice is tender
- Remove from heat, fluff rice, garnish, and serve hot
