Instant Pot Potato Soup

6 bacon strips (lardons)
1 cup frozen Cajun mirepoix mix
1 tablespoon minced garlic
6 large potatoes
Carton of chicken stock (enough to cover potatoes)
1-2 cups heavy cream (enough to make it right consistency)
Salt
Directions
Set instant pot on sauté
Cook bacon
Set aside bacon, keep fat
Sauté mirepoix in fat
Add garlic and sauté
Peel and dice raw potatoes
Add potatoes
Use just enough stock to cover the potatoes
Lock instant pot and set to 8 minutes
Use immersion blender on potatoes
Add heavy cream to achieve desired consistency
Add salt to desired taste
Serve with bacon lardons and cheese (chives, sour cream, etc)
