Ginger Chicken Congee

8 cups water
1.5 lbs bone-in, skin-on chicken thighs or drumsticks
1 cup long-grain white rice
4 (1/4-inch-thick) slices fresh ginger
1 tbsp kosher salt, plus more as needed
Roasted peanuts
Thinly sliced scallions
Minced fresh ginger
Fresh cilantro leaves
Soy sauce
Preserved duck egg
Pork floss
Directions
Place all the ingredients for the congee slow cooker.
Cover and cook until very creamy and the rice is completely broken down, 4.5? hours on HIGH or 8 to 10 hours on the LOW setting
Transfer the chicken and ginger to a plate. Stir the congee with a wooden spoon, making sure to scrape against the bottom and sides of the slow cooker to incorporate congee that's sticking there.
Step 3
Take off the chicken meat and stir back into the slow cooker, discarding the bones, skin, cartilage, and ginger.
Add additional water 1/4 cup at a time until you reach the desired consistency.
Serve hot with the toppings.
