5 Minute Dinner Idea: Creamy Lemon Chicken Thigh Orzo Bake

1 cup uncooked orzo
1¾ cups chicken broth (warm)
½ cup heavy cream
3-4 boneless chicken thighs
1 cup fresh spinach
½ cup grated parmesan
2 cloves garlic, minced (or 1 tsp garlic powder)
1 tbsp lemon juice
½ tsp salt
½ tsp pepper
½ tsp Italian seasoning
1 tbsp olive oil
Optional topping:
extra parmesan or mozzarella
Directions
Preheat oven to 400°F.
In a 9x13 or similar baking dish, add:
orzo
warm chicken broth
cream
garlic
lemon juice
salt, pepper, Italian seasoning
Add in the chicken thighs and spinach, making sure the orzo is mostly submerged.
Drizzle olive oil over the chicken.
Cover tightly with foil and bake 30 minutes.
Remove foil, stir gently, sprinkle parmesan on top, and bake 5–10 more minutes uncovered until:
orzo is tender
chicken reaches 165° F
