Skillet Pizza

Ingredients

1½ tablespoons fat

3 medium potatoes, pared and thinly sliced

Salt and pepper

½ cup chopped onion

½ cup shopped green pepper

2 cups julienne strips ham or canned luncheon meat (1 12-ounce can)

3 eggs

½ cup shredded sharp process American cheese

Directions

Melt fat in 10-inch skillet. Spread half the potato slices over bottom; sprinkle with salt and freshly ground pepper. Top with a layer of half the onion and half the green pepper, seasoning with salt and pepper. Arrange half the meat atop.

Repeat layers of vegetables, reserving the remaining meat for garnish.

Cover; cook over low heat till potatoes are tender, about 20 minutes. Break eggs into bowl; pour over potatoes, breaking yolks and spreading eggs evenly with a fork. Add meat, spoke-fashion. Cover and cook till eggs are set, about 10 minutes. Top with cheese; cover till cheese starts to melt, about 2 minutes. Center with parsley. Cut in wedges. Serves 5 or 6.
