Easy Homemade Chicken Pot Pie

1 TBSP butter
1 onion (diced)
150g carrots
150g celery stalks
1 tsp thyme leaves
1 pound of cooked, shredded chicken breast
2 tablespoons flour
1 cup chicken broth
1 cup of 2% milk
1/2 cup frozen peas
2 sheets refrigerated pie crust
1 tsp Oil to brush top of pie and pie plate
Directions
Preheat the oven to 425 degrees.
Melt the butter, cook in the onion, carrot and celery, along with a pinch of salt.
Add thyme, peas, and cooked chicken. Once warm, add flour.
Pour in the broth and milk slowly. Cook until thick.
Add the filling to the pie dish. Put crust on top and brush with oil. Cut slits in pie crust.
Bake for 30-35 minutes, or until the pastry is cooked and the top is golden.
Let the pie to rest for 10-15 minutes before slicing.
