30 oz frozen hash browns (diced or shredded), thawed*
2 cups sour cream
1 (10.5 oz) can cream of chicken soup (or homemade)
10 Tbsp butter, melted (divided)
1 tsp salt
¼ tsp black pepper
1 tsp dried minced onion
2 cups shredded cheddar cheese
2 cups cornflakes cereal
Directions
Preheat oven to 350°F.
Mix sour cream, soup, 6 Tbsp melted butter, salt, pepper, and onion.
Stir in thawed hashbrowns + cheese. Spread into greased 9x13" pan.
Crush cornflakes in a ziplock, mix with 4 Tbsp melted butter, and sprinkle over top.
Bake uncovered for 40–50 minutes, until bubbly and golden.
Make ahead: Assemble up to 1 day in advance (add topping just before baking).
Freezer tip: Freeze before topping; thaw overnight, add topping, then bake.
Pairs perfectly with ham, turkey, steak, or just a big fork.
