Lime Chicken Soft Tacos

1 1/2 lbs chicken breast, cubed
1/2 cup water
2 tablespoons red wine vinegar
1/2 lime, juiced or 1 tablespoon juice
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon oregano
2 green onions, chopped
3 garlic cloves, minced
Soft corn tortillas
Directions
Cook chicken in frying pan or sauce pan until cooked through. Add the rest of the ingredients except the tortillas. Simmer for about 10 minutes. Warm corn tortillas in microwave under damp paper towel for about 10-12 seconds, then fill with chicken. Garnish as desired with salsa, tomatoes, lettuce, cheese, sour cream, and or guacamole.
Notes
1 1/2 lbs chicken only serves about 5 so double this recipe if more is needed. It is easier to cube the chicken when it is slightly frozen.
