Ultimate Banana Cake

Cake mixture 🍰
3 over ripe bananas mashed with a fork
240g all purpose flour
200g light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 large eggs
180ml good olive oil
120g Greek yoghurt
1 teaspoon (5ml) vanilla extract
1 teaspoon salt
1/2 teaspoon cinnamon (ground)
1/2 teaspoon nutmeg (ground)
180g dark chocolate (smashed up here with a rolling pin)
Topping 🍌
3 bananas, sliced into rings
150g granulated sugar and 15ml water (to make caramel)
Directions
prepare the cake mixture by whisking together brown sugar and mashed bananas into a paste. Add in your olive oil, yoghurt, vanilla extract and eggs until a smooth mixture forms. Add in the flour, baking soda and baking powder, cinnamon, nutmeg and salt
Fold the mixture together until incorporated, and then fold in the smashed chocolate
Put aside
Prepare the topping by lining the bottom of a cake tin with baking paper and arranging the sliced bananas to cover the bottom of the tin (9 inch cake tin used here)
In a saucepan make a basic caramel by combining the sugar and water and cooking until a light brown caramel forms (do not stir! Shake pan if needed). Pour immediately over the bananas when piping hot
Pour the cake mixture over the caramel covered bananas and smooth over. Put in a preheated oven at 180 degrees Celsius for 60 minutes
Remove from the oven, let cool for 20 minutes, turn the cake tin upside down and slide off to reveal a beautiful cake
