Apple Cinnamon Cake

⅓ cup brown sugar
1 teaspoon ground cinnamon
⅔ cup white sugar
½ cup butter, softened
2 large eggs
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ¾ teaspoons baking powder
½ cup milk
2 apples, peeled and chopped (2 cups).
Directions
Preheat the oven to 350 degrees F (175 degrees C). Generously grease and flour a 9x5-inch loaf pan or spray with baking spray.
Mix brown sugar and cinnamon together in a bowl. Add apple and toss to coat.
Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy.
Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
Combine flour and baking powder together in a separate bowl.
Slowly mix flour mixture stir creamed butter and sugar. Mix milk into batter until smooth.
Pour half the batter into the prepared loaf pan.
Add half the apples mixture to the loaf pan. Lightly pat apple mixture into batter.
Pour remaining batter over apple layer; top with remaining apples mixture. Lightly pat apples into batter.
Bake until a toothpick inserted in center comes out clean, about 50 minutes. Transfer pan to a rack and let cool 15 minutes. Turn out cake onto a rack to cool completely, about 1 1/4 hours.

Notes
Remember to pre-soften butter and warm the egg, milk and apple.
50 minutes may not be enough cooking time. Suggest adding time in 5 - 10 minute increments. What work here was 50 + 10 + 5.
