Maple Tahini Kale and Chickpea Salad

Ingredients

Salad ingredients:

2 cups cooked quinoa (~330g) (2/3 cup dry quinoa)

1-2 sweet potatoes, cut into large cubes and boiled until fork tender

8 oz halloumi cheese, diced into small pieces (340g)

3 second spray cooking oil

1 large bunch tuscan kale, finely chopped

1/3 cup slivered almonds (small handful)

Salt, to taste

Chick Peas

2 15 oz can chickpeas, drained, rinsed, & dried (2 425g cans, drained, rinsed & dried)

2 tsp olive oil (10ml)

1-2 tbsp smoked paprika (7-14g)

Dressing ingredients:

1/3 cup tahini (80ml)

1/3 cup water, plus additional as needed (80ml)

2 tbsp maple syrup, plus additional to taste (30ml)

Zest from 1 lemon, juice from 1/2

1/2 tsp diamond crystal kosher salt (tiny pinch)
