Almond Butter Overnight Oats

Ingredients

2/3 cup of old fashioned oats (NOT instant)

1 tsp ground cinnamon

1 tsp of vanilla

3 tbsp chia seeds

1-2 tbsp almond butter (or any nut butter)

1 cup almond milk (or any milk)

1/2 cup Greek yogurt

1/2 TBSP maple syrup

Directions

Combine old fashioned oats, cinnamon, chia seeds and nut butter

Add a splash of the milk and mix the nut butter into the oats

Add the rest of the milk, vanilla, and maple syrup and stir to combine

Separate into 3 servings

Refrigerate overnight or up to 5 days

When ready to serve, add fresh fruit (chopped peeled apple or sliced banana - if using more hardy fruit, can be added earlier)

If too thick, add more milk at any timeLasts in fridge for up to 5 days

Makes 2-3 servings - usually double this recipe
