Buldit Soup - Maccini Family Recipe

1 Onion - Peeled and cut in half
1 Bag of Carrots - peeled
1 Bunch of Celery Stalks - Trimed
3 Cans of Chicken Broth (138 Oz.)
2 Chicken Boullion Cubes
1 1/2 Boxes Milk Crackers (Or Ritz Crackers)
1 Cup Grated Parmesan Cheese
1/4 cup vegetable Oil
5 Eggs
Directions
Make Buldits:
In food processor, grind crackers untill big pieces are gone, but not extremly powdry.
In a large mixing bowl, combine ground crackers with grated cheese and mix thoroughly.
In a seperate bowl, scramble the eggs
Add the eggs, oil, and 1/2 cup chicken broth to the cracker mix, and blend thoroughly.
Mash together until firm.
Flatten cracker mixture against the sides and bottom of mixing bowl, perssing firm.
Chill for at least 1 hour before dropping.
Make Broth:
In a large stock pot, add the Chicken broth, Chicken Boullion, Onion, Carrots, and Celery.
Bring broth to a boil, then reduce heat to a slow simmer.
Simmer broth covered for 2 hours
Strain out spent vegetables from the broth and discard.
Drop Buldits:
Bring broth back to a full rolling boil.
Drop thin slices of the cracker mixture into the broth with large spoon.
Serve immediately, garnish with grated cheese.
