Sweet & Savory Red Lentils

Ingredients

1 cup (190 g) red lentils, rinsed

1 medium onion, finely chopped

2 cups (480 ml) water

¼ cup (60 ml) soy sauce

2 tbsp honey

1 tsp ground ginger (or 1 tbsp fresh grated)

1 tbsp sesame oil (optional)

Olive oil for cooking

To serve:

rice

green beans (or any greens you like)

Directions

Cook your rice according to package instructions.

In a large pan, sauté the onion in olive oil for 3–4 minutes until soft.

Add water, soy sauce, honey, ginger, and sesame oil. Stir.

Add the rinsed red lentils directly into the sauce. Bring to a gentle simmer and cook for 10–12 minutes, stirring occasionally, until soft and slightly thick. If it gets too thick, add a splash of water.

Meanwhile, blanch green beans in boiling salted water for 3–4 minutes, then drain. Serve the lentils over rice with greens on the side.
