Slow Cooker Brown Sugar Garlic Beef

For the Beef:
3–4 lb beef chuck roast
1 tsp salt
1/2 tsp black pepper
1 tsp smoked paprika
1 tbsp olive oil
For the Brown Sugar Garlic Sauce:
1 cup beef broth
1/2 cup brown sugar (light or dark)
1/4 cup soy sauce
5 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1/2 tsp red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Directions
Season the chuck roast with salt, pepper, and smoked paprika.
Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned, about 3–4 minutes per side.
Transfer the roast to the slow cooker.
In a bowl, whisk together beef broth, brown sugar, soy sauce, garlic, Worcestershire sauce, Dijon mustard, and red pepper flakes.
Pour the sauce over the roast.
Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until fork-tender.
Slice or shred the beef and spoon the rich sauce over the top. Garnish with fresh parsley.
Serving Suggestions
Serve over mashed potatoes, rice, or buttered noodles. It’s also incredible in sandwiches or sliders the next day.
