Carmelized Onion And Gruyere Biscuits

Caramelized Onion, Gruyère, and Chive Biscuits
Ingredients:
– 2 cups all-purpose flour
– 1 tbsp sugar
– 1 tbsp + 1 tsp baking powder
– 1/4 tsp baking soda
– 1 tsp salt
– 7 tbsp salted butter, cold
– 1 cup buttermilk, cold
– 1 caramelized onion
– 1 cup grated Gruyère
– 2 tbsp chives, minced
– 1 egg, beaten
Directions
1. Prep mix-ins: At least 2 hours (or the day before) before making the biscuits, slice an onion into long strips and cook over medium heat with 2–3 tbsp of oil or butter. Stir every 5 minutes until caramelized, about 1 hour. Transfer to a baking tray to cool, then chop into small diced pieces. Shred the Gruyère cheese and mince the chives. Store in the fridge until ready to use.
2. Make the biscuits: Preheat oven to 425°F. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk to combine.
3. Cut butter into 1-tbsp pieces and add to the flour mixture. Using a pastry cutter (or hands or a fork), work butter into the flour until pea-sized pieces form. If butter gets warm, chill the bowl for 5 minutes before continuing.
4. Add caramelized onion, shredded Gruyère, and chives. Mix to combine.
5. Pour in buttermilk and fold until a shaggy dough forms. Turn onto a floured surface and form into a long rectangle. Fold into thirds, stack, flatten, and roll out again into another rectangle. Repeat three more times. (If dough warms up, chill for 5 minutes between folds.)
6. Roll dough into a 9x5-inch rectangle and cut into 6 equal squares. Place on a parchment-lined baking sheet. Brush tops with beaten egg.
7. Bake for 17–20 minutes until golden brown. Let cool slightly before serving.
