Caramel Apple Bark

1 tsp. kosher salt
1 Granny Smith apple, peeled, cored, finely chopped
1 1/2 c. mini pretzels, divided
2 c. (340 g.) dark chocolate chips
1/4 c. store-bought or homemade caramel sauce
Flaky sea salt (optional)
Directions
In a medium bowl, mix salt with 1 c. water. Add apple and let sit 5 to 10 minutes. Strain through a fine-mesh sieve, then rinse apples under cold water.
Meanwhile, place 1 c. pretzels in a resealable plastic bag. Using a rolling pin or heavy skillet, crush pretzels until fine crumbs form. Spread in an even layer on a parchment-lined baking sheet.
In a medium heatproof bowl, microwave chips in 30-second increments, stirring between each, until melted and smooth, about 1 minute total.
Spread melted chocolate over pretzels with an offset spatula or a butter knife. Top with remaining whole pretzels and apples.
In a small heatproof bowl, microwave caramel sauce until a drizzling consistency forms, about 30 seconds. Drizzle over bark. Sprinkle with sea salt (if using).
Refrigerate bark until set, at least 20 minutes or up to 1 day.
