Reduced Guilt Egg Muffins

4 English Muffins
4 slices of Canadian Bacon (or pre-cooked regular bacon)
4 large Eggs
4 slices of cheese (swiss, colby-jack, provolone)
Directions
Preheat your air fryer to 400°F for optimal cooking.
I use 3-1/2 inch silicone cups for cooking the eggs.
Carefully crack one egg into each silicone cup, dust the top of the egg with some white pepper and some paprika.
Alternately, scramble the eggs with 1/2 TBSP mayonnaise for each egg, a pinch of salt, white pepper and paprika. The mayonnaise will help ensure they release from the silicone.
Cook the eggs for 4 minutes and set them aside. If you took the scrambled egg approach, they should puff up like a soufle to about an inch and a half high when just about cooked but will shrink back down once removed from the heat.
Alternately, these can be cooked in the oven at 400F. 9minutes for a large egg up to 12 minutes for a 1/2 cup mixture of ingredients.
Place the split English muffin halves directly into the air fryer and toast them for about 5 minutes or until they turn golden brown.
If desired, butter the English Muffin halves.
Assemble your egg Muffins by layering a slice of cheese onto each toasted muffin half, followed by a cooked egg, and finally, a slice of Canadian bacon.
Another option is to skip toasting the English Muffin, butter them if desired, assemble the Muffin and air fry them at 350F for 5 minutes.
These can also be made up and refrigerated for a few days. To heat them from refrigerated, preheat the air fryer to 350F and cook the assembled egg Muffin for 5 to 7 minutes. If you like a little less crispiness, lower the temperature to about 325F.
They could also be frozen, but reheating should be done after thawing them in the refrigerator overnight.
Notes
Cooking too much on the bottom before top is set. Try lower temp for more time.
Change up meat – Canadian Bacon, Sausage patty, Turkey, etc.

The eggs can be scrambled with chopped spinach or other additions:
