Lemon Coolwhip Pie

Yields: 12 servings
Ingredients:
– Crushed graham crackers (for base and topping)
– 2 boxes lemon Jell-O (prepared as directed)
– 1 package cream cheese, softened (whipped cream cheese works well)
– 1 tub Cool Whip
– Optional: Lemon juice and zest (to enhance lemon flavor)
Directions
1. Spread crushed graham crackers evenly in an ungreased 9x13 dish.
2. Prepare lemon Jell-O according to package instructions. Chill in the fridge for about 2 hours, or until just firm.
3. Blend the chilled Jell-O with softened cream cheese until smooth. Add lemon juice and zest if desired.
4. Gently pour the mixture over the graham cracker base.
5. Spread Cool Whip over the top evenly.
6. Sprinkle additional crushed graham crackers on top.
7. Chill in the fridge for 3 to 4 more hours. Pie will remain jiggly but firm enough to serve.
Note: Best enjoyed cold and fresh from the fridge.
