BBQ Chicken Sweet Potatoes

Ingredients

4 small sweel potatoes 40ml olive oil 250g chicken fillets salt and black pepper lOOg barbecue sauce 40g Cheddar, grated 2 spring onions, chopped

Directions

1 Preheat the oven to 200"C/180'C fan/gas mark 6 and use a fork to poke holes into the sweet potatoes. Brush half of the oil over the potatoes and roast for 30 minutes. 2 Brush the chicken with the remaining oi and season with salt and pepper. Add to the tray and roast in the oven for 20 minutes. 3 Brush the barbecue sauce over the chicken and roast for another 10 minutes until the chicken is cooked through and the potatoes are tender. 4 Remove from the oven and leave to rest for five minutes. Slice the chicken into small pieces, or pull apart with two forks. 5 Slice the potatoes down the centre, season with salt and pepper and fill with the Cheddar. 6 Top with the chicken and spring onions and serve hot.
