Tandoori Mango Chicken Salad

Ingredients

1 lb boneless, skinless chicken thighs or breasts

2 tbsp plain yogurt

1 tbsp olive oil

1 tbsp tandoori spice mix

1 tsp paprika

Salt and black pepper to taste

4 cups mixed salad greens

1 ripe mango, peeled and sliced

1/2 red onion, thinly sliced

1/2 cucumber, sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tbsp olive oil

1 tsp honey

Salt to taste

Directions

Mix yogurt, olive oil, tandoori spice, paprika, salt, and pepper; coat chicken. (5 minutes)

Marinate chicken for at least 15 minutes. (15 minutes)

Grill or pan-sear chicken until cooked through. (10–12 minutes)

Let chicken rest, then slice thinly. (5 minutes)

Combine salad greens, mango, red onion, cucumber, and cilantro in a bowl. (5 minutes)

Whisk lime juice, olive oil, honey, and salt to make dressing. (3 minutes)

Top salad with chicken and drizzle with lime dressing 😋🌿 (2 minutes)
