Maryland Crab Cakes

2 pounds crab meat (fresh jumbo lump or lump)
2 large eggs
1 cup mayonnaise
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
3 teaspoons Old Bay seasoning
3 teaspoons fresh parsley, chopped
18 saltines, blended
Directions
Mix mayonnaise, eggs, mustard, Worcestershire sauce, Old Bay, and parsley in a bowl.
Gently fold in crab meat into the mixture.
Add cracker crumbs and continue to gently mix.
Refrigerate for at least 30 minutes (up to 24 hours).
Form into cakes and fry in butter on medium heat for 3-4 minutes per side until golden brown.

1 small shallot
2 tablespoons dill relish
2 tablespoons sweet relish
2 tablespoons chopped nonpareil capers
2 tablespoons fresh parsley or dill
1 cup mayonnaise
Freshly ground black pepper
