Roasted Butternut Squash And Pomegranate Salad With Chicken

Ingredients

1 small butternut squash - peeled, seeds removed and chopped into cubes

1 tsp smoked paprika

1 tsp ground coriander

1/2 tsp garlic granules

1 tbsp dried mixed herbs

2 handfuls of greens of your choice - i used baby spinach - roughly chopped

5-6 radishes - thinly sliced

2 spring onions - finely chopped

a small bunch of dill - finely chopped

the seeds of 1/2 pomegranate

2 portions of cooked chicken - I used leftovers from a whole @fosse_meadows chicken I have roasted

extra virgin olive oil for roasting

For the dressing:

4 tbsp extra virgin olive oil - I have been loving @citizensofsoil

1 tbsp apple cider vinegar - love @willysacv

1/2 tbsp pomegranate molasses

1 tsp dijon mustard

the juice of 1/2 lemon

salt & pepper to taste

Directions

Add the butternut squash to a roasting tray and drizzled with olive oil, smoked paprika, garlic granules, herbs, salt and pepper. Toss well and roast in the oven at 180 degrees celsius for 25-30 minutes until soft.

In a bowl or glass mix together all the dressing ingredients.

Add all the salad ingredients into a bowl and pour over the dressing. mix well and enjoy!
