Gluten Free Italian Meatballs

Ingredients

2 oz olive oil

4 oz fresh chopped basil

4 oz fresh chopped parsley

2 cup small, diced onions

2 tablespoons fresh chopped garlic

1 1/2 cup oatmeal

3/4 cup whole milk

4 pounds ground beef

2 pounds spicy Italian sausage

2/3 cup Parmesan

6 eggs

Salt and pepper to taste

Directions

Make a panade adding the milk to the oatmeal set aside for 10 minutes to let the oatmeal absorb moisture

And a sauté pan, sweat, onions and garlic till translucent season with salt and pepper set aside and let cool

In a large bowl at the ground beef, the Italian sausage, whisked eggs and add cool, garlic, and onions and oatmeal panade.

Add pecorino and Parmesan blend, chopped basil and seasoned with salt and pepper to taste

Cook off one patty to check seasoning

Scoop with 1 ounce scoop on sheet pan and bake until fully cooked
