Ingredients: - 1 1/2 cups fire roasted tomato pasta sauce (or classic) - ½ cup alfredo sauce (or béchamel) - 12 uncooked dried lasagna noodles - 1 tablespoon olive oil - 2 medium carrots, thinly sliced - 1 medium onion, chopped (1/2 cup) - 2 cloves garlic, finely chopped - 2 cups shredded mozzarella cheese (8 ounces) - 15 oz container ricotta cheese - 1/2 cup grated parmesan cheese - 1 bag spinach - 1/2 cup chopped fresh basil - 1/4 cup grated parmesan cheese

Directions
1. Make both the tomato sauce & altredo. Preheat oven to 375. Cook & drain noodles per box instructions.
2. While noodles are cooking, heat oil in skillet on medium/high heat. Cook carrots, onion, and garlic for 10 minutes. Drain.
3. Mix mozzarella, ricotta, 1/2 cup parmesan, spinach, and basil. Set aside. Spread 1 cup of tomato sauce in ungreased baking dish. Top with 4 noodles, 1 cup cheese/spinach mix, 1/3 veg mix, then roll up. Add remaining tomato sauce.
(pro tip: let the noodle hang off the pan so when you roll it up ...you have something to start with
4. Top 4 noodles with 1 cup of cheese/spinach mix, 1/3 of veg mix, then roll up. Top with alfredo sauce. Sprinkle with 1/4 parmesan cheese.
5. Cover & bake 30 minutes. Uncover and bake 15 to 20 minutes longer or until hot & bubbly. I et stand 15 min hefore cervina/
