Cake -------------
100 g sugar
100 g flour
5 eggs (4 yolks)
1 tsp vanilla
Filling -------------
1 and 1/2 tsp instant coffee
1 cup heavy cream
1/2 cup confectioner sugar
Directions
Seperate 4 eggs
In a bowl, whisk 4 egg yolks, sugar and vanilla
Add in the 1 whole egg
In a seperate bowl beat 4 egg whites
Preheat oven to 392F
Add flour to yolk mixture little at a time
Fold in egg whites
Pour into a parchment paper and buttered pan and bake for 10 minutes
Once cooked, turn the cake over and cover with cloth
Filling -------------
In a bowl dissolve the coffee in cream and beat until thickened
Add sugar and beat until stiff peaks form
Spread over cake within 1/2 inch from the edges
Trim the ends and platter it seam side down
