Ingredients

**WHISK**

480 grams AP flour (4 cups)

1 1/2 Tablespoons instant yeast

2 Tablespoons sugar

**ADD**

2 Tablespoons melted butter

4 cups warm milk

**ADD**

1 1/2 Tablespoons salt

762 grams bread flour (6 cups)

Directions

PREHEAT: Bake 375 degrees. Bake 35 minutes

1. In Kitchen Aid bowl fitted with paddle stir together the all-purpose flour, yeast, and sugar. Make a small well in the middle of the flour mixture and pour in the butter and the milk.

2. Mix well, then continue to stir vigorously, slowly adding 1 cup of the bread flour at a time and stirring it in, until you've added 3 to 4 cups of the bread flour and have sticky, shaggy dough; this should take a few minutes.

3. Cover the bowl with a damp tea towel and let it rest for 20 minutes

4. Add the salt and 1 more cup of bread flour and stir it in as best you can. Add another cup of bread flour if the dough is still to sticky to knead. Turn the dough out onto a floured work surface and knead it with floured hands until the dough is soft and smooth, about 8 to 10 minutes.

5. Dust the dough box lightly. Set the dough somewhere warm until it has doubled in size, about 60 to 75 minutes

6. Weigh the dough and divide into 3 round balls, shape and place seam side down in greased loaf pan. Dust with flour

7. Cover the loaves and let rise until dough springs back just a little when you gently poke it with a floured finger, about 40 to 60 minutes
