Yields: 1 serving
Ingredients:
– 3 to 4 oz tuna, diced cleanly into 1/4-inch cubes
– 1 tablespoon ginger, minced
– 1 teaspoon garlic, minced
– 1 tablespoon scallions, very thinly sliced
– 1 teaspoon jalapeño, minced
– 1 tablespoon cilantro, lightly chopped
– 1 tablespoon stir-fry oil (90/10 canola/sesame blend)
– 1 tablespoon soy sauce
– 1 teaspoon lime juice
– 1 teaspoon salt
– 1 slice grilled pineapple, 1/2-inch thick, core removed
– 1 teaspoon toasted sesame seeds
– Micro cilantro or whole cilantro leaves, chilled
– Wonton skins, halved and fried at 300°F
Directions
1. Combine ginger, garlic, scallions, jalapeño, cilantro, stir-fry oil, soy sauce, lime juice, and salt.
2. If batching liquid ahead, use just over 1 oz of the combined mixture.
3. Toss all ingredients except the tuna together in a bowl.
4. Add tuna just before plating to preserve color and texture. Toss gently to coat.
5. Place tuna mixture into a mold, then plate on top of a grilled pineapple slice.
6. Top with toasted sesame seeds and micro cilantro.
7. Fan fried wonton skins from the center on one side of the plate.
