Eggs in a Basket

Ingredients

• Thick Slices of Sturdy Bread

• Butter

• Dollop of Bacon Fat

• Eggs

• Salt & Freshly Ground Black Pepper

Directions

1. Cut thick slices of bread. Use a glass to stamp a hole from the center. Save the cutout.

2. Heat a skillet over medium low. Melt butter, lay in the bread, and coat both sides. Cook about 2 minutes.

3. Drop a dollop of bacon fat into the hole, crack an egg into the center, then raise heat to medium high. Cook 1 minute. Flip carefully.

4. Cook 10 to 15 seconds on the second side. Season with salt and pepper. Crisp the bread cutout on both sides in the pan for prime yolk mopping. Plate and enjoy.
