Beef & Broccoli Pad Thai

Ingredients

8 oz rice noodles

1 lb beef sirloin, thinly sliced

2 cups broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

2 eggs, lightly beaten

3 green onions, sliced

¼ cup crushed peanuts (optional)

Lime wedges for serving

For the sauce:

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

1 teaspoon chili paste (optional)

Directions

Cook rice noodles according to package instructions (4–6 minutes), drain, and set aside.

In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, brown sugar, and chili paste (1–2 minutes).

Heat vegetable oil in a large skillet or wok over medium-high heat (2 minutes).

Sear beef for 3–4 minutes until browned, then remove and set aside.

In the same skillet, sauté garlic for 30 seconds, then add broccoli and cook 3–4 minutes until tender-crisp.

Push broccoli aside and scramble eggs for 1–2 minutes.

Add cooked noodles, beef, and sauce; toss for 2–3 minutes until evenly coated and heated through.

Garnish with green onions, crushed peanuts, and lime wedges before serving.
