Cinnamon Sugar Blondies

- 120 g unsalted butter melted and cooled to room temperature 
- 180 g brown sugar 
- 1 egg cold (straight form the fridge) 
- 1 tsp vanilla essence 
- 150 g all purpose flour 
- 1/2 tsp salt 
πCentre:
- 50 g unsalted butter (soft, at room temperature) 
- 100 g brown sugar 
- 1 tsp ground cinnamon 
πSugar top:
- 2 tbsp sugar 
- 1 tsp ground cinnamon 
Directions
πFor the cinnamon centre:
- Mix the butter with cinnamon and sugar until you get a smooth paste. 
πFor the blondie:
- Whisk together the butter, brown sugar and egg until paler in colour. You can also use an electric mixer. 
- Add the vanilla essence, flour and salt and incorporate using a spatula. 
- Line a 20x20cm mould with baking paper and pour half the blondie mix in. Level using a spatula and then spread out the cinnamon centre on top. Spread the second layer of blondie dough on top and sprinkle with the cinnamon sugar mix. 
- Take to a preheated oven at 180C for 15min
