Dumpling Salad

Ingredients

1 tbsp sesame oil (*see note)

1/2 bag frozen Wontons/Potstickers (I love using the Bibigo brand, ~16 wontons)

1 bag frozen, shelled edamame (8oz)

1 bag Chopped Broccoli Slaw Kit (or equivalent)

1/2 shallot (mandolin)

2 green onion stalks (finely diced)

1/2 cup cilantro (diced)

1/2 cup sweet chili sauce

2 tbsp rice vinegar

1 tbsp soy sauce

½ tbsp sesame oil

1/4 cup wonton strips

2 tbsp diced almonds

1 tsp sesame seeds

Directions

Prep the frozen dumplings/wontons according to bag instructions. My recommendation is to pan-fry for 2-3 minutes per side or air-fry them so they get crispy. *See note*

Cook the edamame according to bag instructions in the microwave. In a large bowl, combine the slaw kit, cooked edamame, diced green onions, shaved shallot and diced cilantro. Toss together.

In a glass measuring cup, whisk together sweet chili sauce ingredients. If the sauce feels to thick, add a tablespoon of water or vegetable broth to thin.

Pour the flavorful dressing on the salad and mix together. Top the fresh veggies with the cooked dumplings. If serving later, hold off on combining the dumplings and salad to maximize dumpling freshness.

Serve your salad garnished with wonton strips, sesame seeds, shaved almonds & a squeeze of lime juice. Enjoy!
