Oven-Cooked Bacon

Regular sliced, center-cut bacon
Optional rub:
2 teaspoons of chili powder
1/2 teaspoon of smoked paprika
1/2 teaspoon of salt
1/3 cup of dark brown sugar
1/4 teaspoon of cumin
1/4 teaspoon of turmeric
1/4 teaspoon of white pepper
Directions
Set an oven rack to the center position and preheat the oven. See notes for temperature.
Add a wire rack to a steel sheet pan and lay the bacon on the rack in a single layer.
Bake for 30 minutes.
Flip the bacon. Season if desired. Rotate the pan 1/2 turn and cook for an additional 15 minutes.
Notes
Try 300F (150C) for thin bacon (18 to 22 slices per pound). 325F (162C) for regular bacon (14 to 18 slices per pound) and for thick (10 to 14 slices per pound). 350F (176C) for extra thick (7 to 10 slices per pound).
Preheated air fryer, in bake mode, to 120C. Cooked thick streaky bacon for 15 minutes. Turned bacon. Seasoned the bacon. Cooked for another 15 minutes. Cooked another 3 minutes at 175C.
