Fall Hearty Orzo

1 large yellow onion (2 medium small)
olive oil
2lbs ground beef (or any ground meat)
Italian seasoning (liberally sprinkles)
5 cloves garlic minced
2 large can diced tomatoes,
6 sun-dried tomatoes slivered (optional)
2.5 cup beef broth (or any broth)
4 tbsp soy sauce
2 cup orzo,
1 cup gratedParmesan cheese (plus enough for toppings),
1/4 cup heavy cream
Large container of baby spinach (reduces greatly!)
Red Chili flakes
Directions
1. In a Dutch oven, add olive oil
2. Add 1lbs ground beef break up and let cook 3-4 mins
3. Add 1/2 diced white onion, 4 cloves minced garlic, Italian seasoning. Let cook a few minutes.
4. Add 14oz can diced tomatoes, add 1 cup broth, add 2tbsp soy sauce
5. Mix altogether
6. Add orzo
7. Cover and let cook about 8 minutes
8. Remove from heat. Add 1/2+ cup grated Parmesan cheese
9. Add 1/4 cup heavy cream and mix
10. Add spinach to let reduce down. Season with pepper and red chilli flakes.
11. Mix altogether, serve top with more cheese, black pepper and chilli flakes
