Kenny's Popover Rolls

Ingredients

1 3/4 cup whole milk

2 cups all-purpose flour

3/4 tsp salt

1/2 tsp baking powder (Clabber Girl)

3 large eggs

Directions

BATTER:

1. Heat milk until warm to the touch. (Do not boil!)

2. Combine dry ingredients and set aside.

3. Beat eggs in a separate bowl. Gradually add milk to eggs, mixing with a mixer until foamy.

4. Add dry ingredients and continue mixing until smooth.

5. Strain through a china cap.

6. Let batter rest for at least 1 hour.

BAKE

1. Preheat over to 450℉ (375℉ for a convection oven.)

2. Place popover pans on a sheet tray and lubricate cups with a spray oil.

3. Fill each cup almost to the top with batter.

4. Place in a hot oven.

5. Cook at 450℉ for 15 minutes, then turn the temperature down to 375℉ and cook or 30-50 minutes. (Do not open oven!)

6. Remove from oven and place on a sheet tray top to cool.

REHEAT

Place in 300℉ oven for 4-5 minutes.
