Crunchy Asian Slaw! Recipe

Ingredients

1/2 small head purple cabbage

1 cup shredded carrots

1/2 cup chopped cilantro

1/2 cup shelled edemame

3 green onions chopped

DRESSING-

1/4 cup Seasoned rice vinegar

1 Tbsp low sodium soy sauce

1 tsp honey

1 1/2 tsp sesame oil

2 tsp grated ginger

2 cloves grated garlic

3 Tbsp olive oil

1 tsp toasted sesame seeds

Directions

Set your mandolin to the thinnest setting and shred the cabbage. If you don’t have a mandolin, use a sharp knife and try to get a thin slice. Add to a bowl along with the rest of the salad ingredients.

Whisk the dressing and add it to the salad. Serve chilled.
