Chilli Prawn Pasta

Ingredients

110g spaghetti

½ tbsp extra-virgin olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 tsp chilli flakes

¼ tsp oregano or thyme

1 can crushed tomatoes

30g prawns, peeled and de-veined

Salt and pepper to taste

2 tbsp parsley, finely chopped

Directions

Put a large pot of salted water on high heat, bring to boil and add the pasta.

Heat a pan over medium heat. Add the oil, onion, garlic, chilli flakes and oregano or thyme and cook until the onions are soft.

Add the crushed tomatoes and let the sauce reduce a little.

Throw in the prawns and season with salt and pepper.

Cook for 3-4 minutes.

Drain the pasta, toss with as much of the sauce as you like, and garnish with parsley.
