Meet Your New Favorite Fall Dessert! This Caramel Apple Date

Ingredients

12 pitted dates

1/2 of a Granny Smith apple diced

1/3 c dark chocolate chips (I like Lily’s)

1 tsp coconut oil

2-3 tbsp of natural* peanut butter

1/4 c chopped pecans

flaky sea salt

Directions

On a parchment lined flat tray or plate, layout 12 dates in a 3x4 sequence so that they are touching.

Lay a second piece of parchment paper on top of the dates and roll out the dates so they are completely flat.

Lift the top parchment carefully and reposition any dates if needed, then lay the parchment paper over the dates again and roll out again.

Once dates are joined in a flat sheet, top with diced apples & chopped pecans.

Heat chocolate & coconut oil in microwave for 30 seconds, mix, then heat for 15 seconds and mix again. Continue to heat in 15 second increments mixing in between until chocolate is completely melted.

*If you are not using natural peanut butter, heat peanut butter in the microwave in 10 second increments mixing in between until peanut butter is a similar consistency to the melted chocolate.

Drizzle peanut butter, then chocolate over apples and pecans.

Top with flaky sea salt.

Freeze for 1-2 hours or until chocolate and peanut butter have hardened.

Once frozen, break or cut into 12 pieces.

Store in airtight container in freezer.

Eat right out of the freezer or remove for ~15 minutes before eating for a softer consistency.
