Ingredients

2 large potatoes, washed and cut into cubes

1 tosp olive oil

1lb mahi mahi

1/4 tsp allspice

1/4 tsp cinnamon

1/4 tsp cloves

1/2 tsp thyme

1/2 tsp ground black pepper

1/2 tsp brown sugar

1/4 tsp salt

Pinch red pepper flakes

1 bell pepper, washed and sliced in strips

1 c kale leaves, steamed

Directions

Preheat oven to 400 and grab a sheet pan. Toss potatoes with olive oil, season with salt and pepper, and roast for 25-30 minutes.

Meanwhile, mix together spices (allspice through red pepper flakes) and rub into the top of the mahi filet.

Move potatoes to the edges of the sheet pan. Add mahi and peppers, and roast for 15-20 more minutes. Serve with steamed kale.
