Roasted Yukon Potatoes

Ingredients

6 large Yukon Gold potatoes, peeled and diced

1/4 cup olive oil

1 1/2 teaspoons paprika

1 1/4 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon chili powder

1/4 teaspoon pepper

1 teaspoon salt, plus more, to taste

Directions

Preheat the oven to 450 degrees F.

Line a rimmed baking sheet with parchment paper.

In a large bowl, add the potatoes.

In a small bowl, combine the olive oil, the paprika, the garlic powder, the onion powder, the cumin, the chili powder, the pepper, and the salt and stir well.

Pour the olive oil mixture over the potatoes and stir to coat.

Spread the potatoes onto the prepared baking sheet.

Bake the potatoes, stirring every 10 minutes, until they are tender inside and crispy outside, about 35 minutes.

Season the potatoes with the salt.

Serve.
