Golden Baked Brie With Caramelized Apples & Thyme

Ingredients

1 sheet frozen puff pastry, thawed

1 wheel Brie cheese, 8–12 ounces

2 Honeycrisp apples, thinly sliced

3 tablespoons salted butter

3 tablespoons maple syrup

Fresh thyme leaves, for garnish

Directions

Step 1: Thaw the puff pastry.

Remove the puff pastry from the freezer and allow it to thaw according to the package instructions.

The pastry should be flexible enough to unfold without cracking, but it should still feel cool. If the pastry becomes too warm or sticky, place it in the refrigerator for several minutes before working with it.

Keeping the puff pastry cold is important because cold butter in the pastry creates those beautiful flaky layers as it bakes.

Step 2: Prepare the Apples

Wash and dry the Honeycrisp apples.

You can peel them if you prefer, but leaving the skin on gives the finished appetizer beautiful color and a little extra texture.

Remove the cores and thinly slice the apples.

Try to keep the slices relatively uniform so they cook evenly.

Honeycrisp apples are especially delicious here because they provide natural sweetness along with a slight crispness and tartness that balances the rich Brie.

Step 3: Caramelize the Apples

Place a large skillet over medium heat.

Add the 3 tablespoons salted butter and allow it to melt.

Once melted, add the sliced apples.

Cook for approximately 4–5 minutes, stirring occasionally, until the apples begin to soften.

Pour in the 3 tablespoons of maple syrupand gently toss the apples so they become coated.

Continue cooking for another 5–7 minutes, stirring occasionally.

The apples should become tender and glossy, with the maple syrup and butter forming a delicious caramel-like coating.

Don’t cook them until completely mushy. You want them tender but still holding their shape.

Remove the skillet from the heat and allow the apples to cool slightly.

Step 4: Prepare the Brie

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Place the thawed puff pastry on a lightly floured work surface.

If necessary, gently roll the pastry into a slightly larger square. You want enough pastry around the Brie to fold it completely over the cheese.

Place the Brie wheel in the centre of the pastry.

There is generally no need to remove the Brie rind. The rind is edible and helps keep the cheese together as it melts.

Step 5: Add the Caramelized Apples

Spoon some of the caramelised apples over the top of the Brie.

Keep the apples relatively centred so you have enough pastry around the edges to wrap the cheese.

Reserve a few beautiful apple slices for arranging on top after baking, if desired.

Sprinkle a small amount of fresh thyme over the apples.

The thyme adds an earthy, fragrant flavour that keeps the sweetness of the apples and maple syrup from becoming overwhelming.

Step 6: Wrap the Brie

Carefully bring the corners of the puff pastry toward the centre of the Brie.

Fold the pastry over the cheese, working around the wheel until it is completely enclosed.

Pinch the seams gently to seal them.

Turn the wrapped Brie over so the seam side is facing down.

Place it on the parchment-lined baking sheet.

If there is excess pastry, you can trim it away. Avoid creating an extremely thick layer of pastry because it may bake unevenly.

Step 7: Decorate

If desired, use any pastry scraps to create small decorative leaves, stars, or other shapes.

Place the decorations gently on top of the wrapped Brie.

For an especially beautiful presentation, lightly score the pastry with a knife, being careful not to cut all the way through.

You can also brush the pastry with a little beaten egg for a deeper golden finish, although this is optional.

Step 8: Bake

Place the Brie in the preheated oven.

Bake for approximately 20–25 minutes, or until the puff pastry is beautifully puffed and golden brown.

Depending on the size of the Brie and your oven, it may need a few additional minutes.

Keep an eye on the pastry toward the end of baking. You want a deep golden exterior without allowing the pastry to burn.

Step 9: Rest Before Serving

Remove the baked Brie from the oven and allow it to rest for approximately 5–10 minutes.

This step is important.

If you cut into it immediately, the melted cheese may flow out too quickly.

A short resting period allows the Brie to remain wonderfully gooey while becoming easier to serve.

Garnish generously with fresh thyme leaves.

Add a few caramelised apple slices on top and, if desired, drizzle with a little extra maple syrup.

How to Serve

Transfer the warm Brie to a serving board or platter.

Arrange crackers, toasted baguette slices, crostini, grapes, pears, or other fruit around the cheese.

To serve, simply cut into the top of the pastry with a small knife.

The warm, creamy Brie will begin to ooze out.

Spoon the melted cheese and caramelised apples onto a cracker or piece of toasted bread.

For extra crunch, sprinkle chopped toasted walnuts or pecans over the top.

COOKING TIPS:

Keep the puff pastry cold.
