Tomato Butter Pasta

Here’s how:

Cook about a third of a box of pasta in salted water.

While the pasta cooks, melt 1 tablespoon of butter in a pan over medium-low heat. Add a pinch of red pepper flakes and let them sizzle for about a minute. Add 2 tablespoons of tomato paste, stirring for a couple minutes until it has darkened in color. Then whisk in 1 cup of that salty pasta water.

Directions

Add 2 more tablespoons of cold butter and whisk quickly to emulsify it into the sauce — it should turn smooth and glossy. Toss in the cooked pasta and stir until everything’s well coated. Taste and adjust the seasoning, then finish with freshly grated parmesan, black pepper, and basil. Enjoy!
