Honey Garlic Chili Chicken & Rice

Honey Garlic Chicken:
14 oz chicken breast, cubed
1 garlic clove, minced
1 tbsp honey
1/2 tbsp thai sweet chili sauce
1 tsp soy sauce
1 tsp each: garlic powder, paprika, chili flakes
1/4 tsp salt
Chili Garlic Rice:
250g cooked jasmine rice
1 tsp ginger, minced
1 clove garlic, minced
1/5 cup frozen peas and carrots
2 eggs
1 tbsp each: thai sweet chili sauce, soy sauce
Hot Honey Drizzle:
1-2 tbsp honey
1/2 tbsp Franks red hot sauce
1/2 tsp chili flakes
Directions
Season and cook chicken in sauce until sauce starts to slightly caramelizes and chicken blackens. Set aside.
In same pan, sauté garlic and ginger for 1 to 2 mins, until lightly browned
Add veggies and cook for 1 min until warmed through. Add eggs and scramble.
Reduce heat to medium low and add rice and sauce. Cook around 4 to 5 mins until coated with sauce. Serve with the chicken on top, Drizzle hot honey sauce and top with green onions
