Roasted Red Pepper & Whipped Feta Dip

Ingredients:

1 cup crumbled feta cheese

½ cup Greek yogurt

1 garlic clove, minced

Juice of ½ lemon

1 large roasted red pepper (jarred or homemade)

2 tosp olive oil (+ extra for drizzling)

Pinch of chili flakes (optional)

Fresh basil & chopped tomato for topping

Directions

Instructions:

1. In a food processor, blend feta, yogurt, garlic, lemon juice, and 1 tosp olive oil until smooth and fluffy.

2. Dice roasted red pepper and fold into the feta mixture (or pulse a couple of times for a more blended texture).

3. Spread in a shallow dish. Top with chopped tomato, basil, chili flakes, and a generous drizzle of olive oil.
