Low-calorie Bang Bang Shrimp

Ingredients

For the shrimp:

12 oz extra-large shrimp, peeled, deveined, tail-on

1 tsp garlic powder

1 tsp smoked paprika

½ tsp salt

¼ tsp black pepper

1 large egg white

1½ tbsp cornstarch

Olive oil spray (or any cooking spray)

For the sauce:

¼ cup plain non-fat Greek yogurt

2 tbsp Thai sweet chili sauce (use gluten-free if needed)

1 tsp Sriracha

½ tsp honey

To serve:

Romaine or lettuce of choice (optional)

Directions

Prep the shrimp:

Pat shrimp dry and season with garlic powder, smoked paprika, salt, and black pepper.

Set up a dipping station:

Beat the egg white in a small bowl. Add cornstarch to a separate bowl.

Coat the shrimp:

Dip each shrimp into the egg white, then into the cornstarch. Tap off any excess cornstarch before placing it on a plate or tray.

Air fry:

Lightly spray the bottom of your air fryer basket with oil spray. Arrange the shrimp in a single layer (don’t overcrowd) and lightly spray the tops of the shrimp as well.

Air fry at 400°F for 8 minutes, flipping halfway through, until golden and crisp.

Make the sauce:

In a bowl, mix together Greek yogurt, Thai sweet chili sauce, Sriracha, and honey.

Toss & serve:

While shrimp is still hot, toss it in the sauce until evenly coated. Serve over lettuce for a low-carb wrap, (make sure to remove the tails) or enjoy as-is!
