Orzo Chicken Veggie Bake

160g Orzo pasta
320g Chicken breast, cubed
180g Chickpeas (canned, drained, no added salt)
150g Asparagus, chopped into bite size pieces
150g Red onion, chopped
150g Mushroom, sliced
100g Spinach
80g Sundried tomatoes (in oil, drained)
100g Parmesan
2 Garlic cloves, diced
1 tbsp Paprika
400ml Chicken stock
Directions
Combine all of the ingredients in a dish.
Cover with foil and bake in a preheated oven at 190°C for 35 minutes.
Remove the foil and bake for a further 10 minutes for an extra crispy finish.
Add a squeeze of lemon 🍋 before serving.
