Cheesesteak Skillet

Ingredients

3 tbsp avocado oil

1 lb shaved beef or thinly sliced steak

1 medium or 1/2 large yellow onion

2 cloves garlic minced

2 cups cremini mushrooms

2 bell peppers I did 1 red 1 green

4 slices of provolone cheese

Kosher salt & pepper

Hoagie bread to serve optional

Directions

1. Season the steak with salt and pepper. Heat 1 tbsp avocado oil in a cast iron skillet over medium high heat. Add the steak once the pan is hot and sear for 1-2 minutes each side. It should be crispy on the outside and just cooked through on the inside. Remove the steak and set aside.

2. Add another tablespoon of oil then add the mushrooms. Stir occasionally for about 3 minutes then add another tablespoon of oil, onions, garlic and peppers. Season with 1/2 tsp kosher salt and 1/2 tsp black pepper.

3. Stir occasionally for about 5-7 minutes until the peppers and onions are soft. Add the steak back in and combine.

4. Reduce the heat to medium low, add the cheese on top and cover for about 1 minute or until cheese is melted. Serve while hot as is or add to a hoagie roll to make a sandwich.
