Ingredients

1 c cottage cheese (I used 2% fat)2 large eggs¼ cup all-purpose flour1 tsp Italian seasoning½ tsp garlic powder1 c shredded mozzarella (I used fat free)½ c pizza sauce20 turkey pepperonis

Drizzle of Mike’s Hot Honey sauce (optional)

Directions

Preheat the oven to 400 degrees F (200 degrees C). Add the cottage cheese and eggs to a high-powered blender and blend until smooth. Pour the blended cottage cheese mixture into a medium bowl along with the flour, Italian seasoning, and garlic powder, and mix until combined. Line a 9 by 13-inch baking sheet with parchment paper and spread the mixture evenly into a rectangle on the pan.

Bake the crust for 15 to 20 minutes, or until golden and dry to the touch. Spread the pizza sauce over the crust, leaving a border around the edges. Sprinkle with mozzarella and toppings of choice.

Return the pizza to the oven and bake for another 8–10 minutes, until the cheese is melted and golden. Top with grated parmesan cheese and a drizzle of hot honey, if desired. Let it cool for a few minutes before slicing and serving.

Macros for how I made it (including hot honey) if split into 20 squares:
